You sound like a gem. Whatever you give her wiill b special bc u r taking the time to think about it. One piece of advise..keep it up even after you are married. If you know where she is having her hair and makeup done, send her favourite flowers to the salon together with a note expressing how excited and happy you are to have her as your wife and to be her husband.
She sounds like she may be sentimental so perhaps once you have finished the ceremony and reception and you have a moment of quiet (in your hotel room) give her a locket with a picture of her parents on their wedding day in it; or your engagement picture; or if she has a child from a previous relationship their picture; etc. etc.

Maybe a nice picnic in somewhere hilly with flowers where there’s a slight chance for showers. Make sure its totally unexpected to her. Like maybe it could start off like a drive somewhere but the car seems to unexplainably ‘break down’ near the sight where the picnic is set up.
