What is proper flag folding etiquette for a school Vets Day assembly?

I am part of the school’s Veterans Day assembly committee. We would like to demonstrate folding of the flag at the assembly, but are not sure if it is against protocol for civilian teenagers to fold the flag. We are also planning to invite veterans from DAV to the assembly. We’re hesitant to have them fold the flag, but we can ask if we have to. Is it OK to fold the flag ourselves as long as we are respectful?

As far as I know, there is no age restriction. Be sure the flag NEVER touches the ground though.
